Bold, Fresh And Bursting With Summer In Every Sip

If you’re after a cocktail that tastes like sunshine in a glass, this Passionfruit Caipiroska is it – bright, zesty and ridiculously refreshing.

This cocktail started as my daughter’s go-to summer drink. She mixed it on hot days when we wanted something cold and fruity. It quickly became a family favourite. Fresh lime, brown sugar, real passionfruit and crisp vodka make the base. A splash of fizzy Pasito brings everything together. It’s bright, refreshing and a little too easy to drink. Perfect for BBQs, catch-ups or any warm day that needs a tropical lift.

What Makes It So Good?

This drink nails that sweet–tangy combo without being heavy or overly sugary. The fresh lime releases its oils as you muddle, the passionfruit brings that bold tropical punch, and the brown sugar adds warmth and balance. Top it with ice-cold passionfruit soda and it becomes the kind of cocktail you want to drink all summer long.

Serve it icy, garnish with mint, and pair it with fresh seafood, grilled chicken skewers or crunchy salads — it’s refreshing, bright and fits anywhere.

Ingredient Notes

Fresh lime is essential here – the bottled stuff dulls the whole drink. Brown sugar helps with muddling and gives a subtle caramel note. Fresh passionfruit is ideal, but frozen pulp works beautifully too. Use any decent vodka you like, and keep the ice crushed for extra chill factor (whole cubes work if that’s all you’ve got). And for the fizz? Kirk’s Pasito is the MVP.

Variations

Swap vodka for rum for a tropical twist, lighten it with coconut water, shake in extra mint, or batch it into a jug. Just top with soda right before serving to keep the fizz.

Equipment

  • Cocktail Shaker

Ingredients

  • 1 lime, halved and thinly sliced
  • 1 tablespoon brown sugar
  • 2 large passionfruit, pulped
  • 80ml Vodka
  • Ice cubes, crushed (you can also leave them whole)
  • Passionfruit flavoured soft drink, to top up each glass (I used Kirk's Pasito brand)
  • Mint leaves, to garnish

Instructions

  • Place lime and brown sugar into a cocktail shaker. Muddle gently using the base of wooden spoon or a muddler to release the lime juice and combine with the sugar.
  • Add the passionfruit pulp, Vodka and crushed ice. Shake, shake, shake!!
  • Divide mixture between 2 serving glasses. Top each glass with chilled passionfruit softdrink to fill. Garnish with fresh mint leaves and serve.

Notes

  • MEASUREMENTS
    We use Australian metric measurements. 1 teaspoon = 5ml, 1 tablespoon = 20ml and 1 cup = 250ml
    We use free range extra large size eggs. Each egg weighs approximately 59g.

    What makes passion fruit drink special is its bold tropical character. The flavor is intense but still smooth, giving a pleasant sharpness that wakes up the palate without being too strong.
