Ingredients
- 1 tablespoon ground cumin
- 1 tablespoon ground coriander
- 1 tablespoon paprika
- 2 teaspoons ground cinnamon
- 2 teaspoons ground ginger
- 2 teaspoons turmeric
- 2 teaspoons ground black pepper
- 2 teaspoons brown sugar
- 1 teaspoon salt
- ¼ teaspoon ground nutmeg
- ¼ teaspoon ground cloves
- ¼ teaspoon cayenne pepper (optional)
Instructions
- In a bowl, combine all ingredients and mix until thoroughly combined.
- Taste the spice blend and adjust the salt, sugar and cayenne pepper according to your preference for saltiness, sweetness and spiciness.
- Store the Moroccan spice blend in an airtight container or glass jar, away from heat and sunlight.

- COOKS NOTES:
Oven Temps: Oven temperatures are for conventional, if using fan-forced (convection), reduce the temperature by 20˚C.
Measurements: We use Australian tablespoons and cups: 1 teaspoon = 5 ml, 1 tablespoon = 20 ml & 1 cup = 250 ml.
Herbs: All herbs are fresh (unless specified) and cups are lightly packed.
Vegetables: All vegetables are medium size and peeled, unless specified.
Eggs: We use extra-large size and eggs are 55-60 g each, unless specified.
