Greek Tzatziki Dip
Equipment
- Box grater
- Clean tea towel or cloth
Ingredients
- 1 large Lebanese cucumber, peeled
- 2 tablespoons lemon juice
- 1 ¼ cups Greek style natural yoghurt
- 1 clove garlic, finely grated
- 1 tablespoon extra virgin olive oil
- 1 tablespoon chopped fresh dill
- Sea salt & cracked black pepper, to taste
Instructions
- Coarsely grate the cucumber into a bowl. Add a good pinch of salt and 1 tablespoon of the lemon juice. Set aside for 5 minutes for the the cucumber to release its juices.
- Meanwhile, place yoghurt into a bowl. Add the garlic, olive oil, dill, remaining lemon juice and season well with salt and pepper. Stir well to combine.
- Pour cucumber mixture into the centre of a clean tea towel or a new 'chux' style cloth. Bring the edges up to the meet in the centre and gather it up. Squeeze the cucumber over a bowl or the sink to remove as much excess liquid as possible.
- Add the squeezed cucumber mixture to the yoghurt and stir well to combine. Taste and season again if necessary. Cover and chill until required. Serve with vegetable crudités, pita bread, crackers etc or serve on wraps, with grilled meats or as a sauce.

Oven Temps: Oven temperatures are for conventional, if using fan-forced (convection), reduce the temperature by 20˚C.
Measurements: We use Australian tablespoons and cups: 1 teaspoon = 5 ml, 1 tablespoon = 20 ml & 1 cup = 250 ml.
