Ingredients required
With a handful of ingredients you can whip these chicken schnitzels up in no time at all….
- Chicken breast – these will be sliced into 3-4 thin schnitzel fillets each
- Plain flour – seasoned well with salt and pepper
- Eggs – lightly beaten for the egg wash
- Panko breadcrumbs – for the best crunchy crispy coating these are the ultimate breadcrumbs
- White & black sesame seeds – I like to use both but just one variety will do if that is all you have
- Neutral oil – for shallow frying. Vegetable, canola or rice bran works well here.

Chicken Schnitzel with Sesame Seeds
Ingredients
- 2 large or 4 small chicken breast fillets
- 1⁄3 cup plain flour, seasoned with salt and pepper
- 2 eggs, lightly beaten
- 2 cups panko breadcrumbs
- 2 tablespoons white sesame seeds
- 2 tablespoons black sesame seeds
- Cooking oil (for shallow frying)
To Serve
- Salad of choice or Steamed vegetables
- Oven baked chips, mash potato or roast potatoes
Instructions
- Lay your chicken breasts on a clean board. Using a very sharp knife, slice the chicken breast fillet in half (horizontally) if using small breast fillets or into 3 steaks if using large breast fillets. You can pound them if desired to even up the thickness. Set aside.
- Place your flour and salt and pepper into a freezer bag and shake to combine. Place eggs into a shallow wide bowl and the panko and sesame seeds into a seperate shallow wide bowl.
- Working with a few pieces of chicken at a time, place into the flour and shake well to coat. Then dip into the egg mixture to coat evenly then place into the crumb mixture, pressing down firmly on both sides to get as much crumb on there as possible. Transfer to a lined baking tray or plate. Repeat with remaining chicken and coating ingredients.
- Heat enough oil to just cover the base of a large non-stick frying pan over medium heat until hot. Working in batches, cook the chicken schnitzels for 3-4 minutes on each side or until golden brown and chicken is cooked through. Drain on paper towel briefly before transferring to a wire rack. Repeat with remaining chicken, adding a little more oil, if required to complete cooking.
- You can also transfer chicken, on the wire rack, to a 160C oven to keep warm, whilst cooking remaining chicken. I usually don't bother though as it quick cooking.
- Serve chicken with your choice of sides and sauces.

- MEASUREMENTS
We use Australian metric measurements. 1 teaspoon = 5ml, 1 tablespoon = 20 ml and 1 cup = 250ml
We use free range extra large size eggs. Each egg weighs approximately 59g. - SESAME SEEDS
You can purchase black sesame seeds in the dried fruit, nut and seed aisle of most major supermarkets. They are also available to purchase from Asian supermarkets or greengrocers and gourmet food shops like Harris Farm etc.
