Frozen Frosty Fruit Cocktail

Equipment

  • High speed blender, Nutri Bullet or Thermomix

Ingredients

  • 2 frozen Tropical Frosty Fruits
  • ½ cup Vodka (or another white spirit such as gin or Barcardi)
  • 250ml (1 cup) passionfruit flavoured soft drink (we used Pasito)
  • 1 ½ cups ice cubes
  • Pulp of 2 passionfruit

TO GARNISH (OPTIONAL)

  • 1 passionfruit, halved
  • 2 sprigs fresh mint leaves

Instructions

  • Remove the Frosty Fruit ice blocks from their packaging and let them sit at room temperature for a few minutes to soften slightly. This will make it easier to to remove from their sticks.
  • Remove Frosty Fruits from their sticks and place into a high speed blender with remaining ingredients.
  • Secure the lid on the blender and blend until all the ingredients are smooth and well combined. You should have a slushy, icy consistency.
  • Add the passionfruit pulp and stir into the cocktail mixture with a spoon.
  • Pour the mixture between 2 chilled glasses. If you want to take it up a notch, garnish your cocktail with a fresh passionfruit half and a sprig of mint. It adds a beautiful touch and a hint of freshness to your drink. Enjoy :)

Notes

  1. MEASUREMENTS
    We use Australian metric measurements. 1 teaspoon = 5ml, 1 tablespoon = 20ml and 1 cup = 250ml.
    We use free range extra large size eggs. Each egg weighs approximately 59g.

    Frosty Fruits (made by Peter's) are the ultimate summer refreshment. Made with real fruit juice and 99% fat-free. These are an Aussie classic ice-block and are available from all major supermarkets in the ice cream section of the freezer isle. Servo's etc may also stock them too.
