Corn Fritters with Avocado Salsa
Ingredients
CORN FRITTERS
- 1 ¼ cups self-raising flour
- 2 eggs
- ½ cup milk
- 4 spring/green onions, sliced
- ⅓ cup coriander leaves
- 1 long red chilli, deseeded and sliced
- ½ teaspoon garlic powder
- 400g can corn kernels, drained
AVOCADO SALSA
- 1 avocado, diced
- ¼ cup chopped coriander
- 1 tablespon lemon or lime juice
- 1 eschalot, finely sliced
TO SERVE (OPTIONAL)
- Poached or fried eggs
- Crispy bacon or prosciutto
Instructions
CORN FRITTERS
- Place flour, eggs, milk, spring/green onions, herbs, chilli, garlic powder and half the corn kernels into a food processor. Pulse until combined. Fold through remaining corn kernels and season well with salt and pepper.
- Drizzle a little oil into a non-stick pan and place over a medium low heat. Working in batches, add ¼ cups of batter to the pan and cook for 1-2 minutes on each side or until golden and cooked through. Drain on paper towel. Repeat with remaining batter.
- Serve fritters with Avocado Salsa, poached or fried eggs and some crispy bacon or prosciutto if desired.
AVOCADO SALSA
- Combine all ingredients in a bowl. Season to taste with sea salt and cracked black pepper.

- COOKS NOTES:
Oven Temps: Oven temperatures are for conventional, if using fan-forced (convection), reduce the temperature by 20˚C.
Measurements: We use Australian tablespoons and cups: 1 teaspoon = 5 ml, 1 tablespoon = 20 ml & 1 cup = 250 ml.
Herbs: All herbs are fresh (unless specified) and cups are lightly packed.
Vegetables: All vegetables are medium size and peeled, unless specified.
Eggs: We use extra-large size and eggs are 55-60 g each, unless specified.
