What is a Bruschetta Salad?
Bruschetta Salad takes the fresh flavours of classic tomato bruschetta and turns them into a quick salad. Instead of serving the tomato mixture on toasted bread, everything goes into one bowl. Juicy tomatoes, fresh herbs, balsamic and crunchy croutons come together for a bright, flavour packed dish.
It delivers the same fresh tomato and basil flavour as traditional bruschetta, with added crunch from the croutons.
For extra texture, you can also add cooked barley and crumbled feta. It turns the salad into a more filling meal while keeping those classic bruschetta flavours.

How to Make Bruschetta Salad in 5 Minutes
- Mix the salad: Add the tomatoes, croutons, red onion and herbs to a large bowl. Season with sea salt and cracked pepper.
- Add the dressing: Drizzle over the olive oil and Sticky White Balsamic. Toss gently until everything is well coated.
- Finish and serve: Top with Sticky Balsamic Pearls if using. Serve straight away while the croutons stay crisp.
What is Sticky White Balsamic?
Sticky White Balsamic is a thick, sweet white balsamic glaze made by the Australian brand Sticky Balsamic. The vinegar is slowly reduced to create a glossy, syrup like finish with a balance of sweetness and acidity. It works well drizzled over salads, vegetables, grilled meats, or fresh cheese.
If Sticky White Balsamic is not available, you can substitute with:
• Caramelised balsamic glaze from the supermarket
• A mix of white balsamic vinegar, olive oil, and a small pinch of sugar
What are Balsamic Pearls?
Balsamic pearls are small spheres filled with balsamic vinegar that burst when you bite into them. They add a pop of sweet, tangy flavour and a little visual flair to salads and appetisers. Sticky Balsamic Pearls come in flavours such as original, truffle, fig, lemon and quince. If you cannot find them, simply leave them out. The bruschetta salad will still taste fantastic.
Serving Suggestions
This Bruschetta Salad works as a quick lunch, light dinner or fresh side dish. Serve it alongside grilled chicken, fish or steak, or add it to an Italian style spread with pasta and garlic bread. For entertaining, spoon the salad onto a large platter and finish with extra herbs and balsamic pearls so guests can help themselves. If you add barley and feta, it becomes a more filling meal that is great for picnics or easy lunches.
Storage
This bruschetta salad is best eaten fresh so the croutons stay crisp. If making ahead, store the tomatoes, onion and herbs in an airtight container in the fridge for up to 2 days. Keep the dressing and croutons separate and combine just before serving.
